Allyl phenoxyacetate Usage And Synthesis
Aroma
Somewhat sharp, mixed-fruity, mainly Pineapple-like and honey-sweet odor of great tenacity. Heavy-sweet fruity-honey-like taste, somewhat reminiscent of "cooked" fruit.
Rarely, if ever, used in perfumery, except for "honey" bases, etc. Used in flavor compositions, as a modifier in imitation Strawberry, Pineapple, etc. in mere traces.
Chemical Properties
Allyl phenoxyacetate is a clear, colorless to
yellowish liquid with a green, sweet, herbal, fruity odor with nuances of galbanum
and pineapple.
It is prepared by reaction of phenoxyacetic acid alkali salts with allyl halogenide
and used in technical perfumery.
Occurrence
Has apparently not been reported to occur in nature.
Uses
Allyl Phenoxyacetate is a synthetic flavoring agent that is a stable, colorless to light yellow liquid of heavy fruit note odor. it should be stored in glass or tin containers. it is used in pineapple, quince, and fruit flavors with applications in candy and beverages at 1–3 ppm.
Production Methods
Allyl phenoxyacetate can be producted by direct esterification of Allyl alcohol with Phenoxy acetic acid under azeotropic conditions.

By direct esterification in benzene solution.
