Physical properties
Allyl vanillin is a white crystals of vanillin-like odor, somewhat weaker than Vanillin, but also more naturaI Vanilla-like.
Uses
Allyl vanillin could find use as a modifier to accompany Vanillin and/or Ethylvanillin (so-called) in all flavor types where Vanillin-type flavor is called for.
Preparation
Allyl vanillin is prepared by direct esterification of Allyl alcohol with iso-Valerie acid under azeotropic conditions.
