BETANIN Usage And Synthesis
Chemical Properties
Red to purplish red paste or powder, odorless, aqueous solution is red to purplish red. Soluble in water, insoluble in ethanol. Alkaline solution turns yellow, Ph value 3~7 is more stable; good staining, but poor heat resistance; light and oxygen will promote its degradation.Ph value 5.0, half-life: 1150min±100min(25℃), 14.5min±2min(100℃); maximum absorption wavelength is 537~538nm.ADI does not need special provisions(FAO/WHO. 1994).
Uses
Betanin is a glycosidic, indoline pigment that derives from red beets. Betanin has been used as a building block for chemical synthesis, as a food additive, and in analytical, material, and biological studies. This same product was formerly listed as CDS000584, offered red beet extract diluted with dextrin. Betanin is susceptible to degradation in light and elevated temperatures. When kept dry, it is stable to oxygen.
