Uses
Stachyose is widely present in legumes and are indigestible by humans because of a lack of α-galactosidase. As a result, these compounds undergo fermentation in the colon with the concomitant production of CO2, H2, and CH4, commonly referred to as flatulence.
Uses
Stachyose - 70% is used in method for preparing high-purity Stachyose from Rehmannia glutinosa by combining subcritical and microbial fermentation.

It has a role as a plant metabolite and a mouse metabolite. It is a raffinose family oligosaccharide and a tetrasaccharide. It is functionally related to a sucrose and a raffinose.
