Chemical Properties

Colorless to white monoclinic crystal or white crystalline powder, odorless, with a special taste mixed with succinic acid and salty (sour and shellfish flavor), taste threshold 0.015%. Easily soluble in water (40g/100ml, 25℃).

Uses

Succinic acid, sodium salt can be used as a flavor improver and sour agent, mainly used in the preparation of soy sauce, spicy soy sauce, sausage, ham, surimi products, etc.

Synthesis

Succinic acid, sodium salt is obtained by neutralization and crystallization of succinic acid and sodium carbonate or sodium hydroxide.

Succinic acid sodium (3.0 or 6.0 mg/kg, PO) increased the percentage of entries into open arms and of time spent on open arms^[1].
succinic acid (3.0, 6.0, and 12.0 mg/kg, IP) caused significant increases in food intake during 5 min when compared with the vehicle^[1].
