Description

3-Nonanon-l-yl acetate has a herbaceous, fruity odor. Prepared by condensation of methyl hexyl ketone with formaldehyde under mild alkaline conditions to yield (β-ketol, which is subsequently acetylated.

Uses

3-nonanon-1-yl acetate is mostly used in flavours. Its herbaceous character offers interesting notes for Lavender and Fougere types, and it blends very well with the spicy versions of Men's fragrances, etc. It is also used in fruit and spice flavour compositions to introduce a richer herbaceous and more "natural" character. The concentration is about 1 to 10 ppm, sometimes even less, in the finished product.
