Chemical Properties

Yellowish liquid. It has a grassy, fat, fruit and spice-like aroma. Flash point 60 ℃. Soluble in ethanol and most non-volatile oils, insoluble in water.

Uses

2,4-Heptadienal is mainly used for the preparation of blueberry, raspberry and miscellaneous fruit flavors.

Definition

ChEBI: (E,E)-hepta-2,4-dienal is a heptadienal in which the two double bonds are located at positions 2 and 4 (the E,E-geoisomer). It has a role as a flavouring agent.

Synthesis

2,4-Heptadienal is synthesized by reducing heptadienoic acid to heptadienol with LiAlH4 and then oxidizing it with MnO2.
