Uses
Propyl Heptanoate is a synthetic flavoring agent that is a stable, colorless liquid of fruity odor. it should be stored in glass, tin, or resin-lined containers. it is used in apple flavors and modified cof- fee. it has applications in beverages, ice cream, candy, and baked goods at 4–18 ppm.
Preparation
By treating heptanoic acid with propyl alcohol in the presence of mineral acids, or in benzene solution in the presence of p-toluenesulfonic acid.
