Chemical Properties
Odorless, tasteless, non-toxic, heat-absorbent. Soluble in water to form a colloidal solution, stable to light and heat. Insoluble in ethanol, ether, chloroform and other organic solvents. Its aqueous solution has good viscosity, stability, protective colloid and film-forming properties, not easy to rot and mildew, stable in alkaline and weakly acidic conditions, in strong acid conditions will produce precipitation. The aqueous solution is more stable in alkali and worse in acid, generating free acid insoluble in water and reducing viscosity, so it is not suitable for strong acidic food. The viscosity of aqueous solution decreases when it is heated above 80℃ for a long time.
