Application
1. Application in Food Additives Black bean husk red pigment is a natural pigment that is non-toxic and safe for consumption. Under acidic conditions, it exhibits good stability to light and heat, making it suitable for coloring candies, pastries, fruit wines, beverages (acidic), and meat processing, with a suitable shelf life. According to the Hygienic Standard for the Use of Food Additives (GB-2760-2007), this product can also be used for sugar coating in cosmetics and pharmaceuticals. Therefore, using black bean husks as a raw material is inexpensive and opens a new path for the exploration and development of natural pigments and the comprehensive utilization of agricultural by-products, yielding certain social and economic benefits. 2. Application in Functional Foods With the deepening research on anthocyanin pigments, it has been found that they can not only add vibrant colors to food but also possess antioxidant, anti-cancer, vision-protecting, eye-fatigue-relieving, anti-aging, and blood pressure-lowering effects. Therefore, anthocyanins are gradually developing towards functional health foods. Currently, products with anthocyanins as the main ingredient are already on the market in Japan and South Korea, used to relieve symptoms such as computer-induced eye fatigue. In the United States, the recommended daily intake of anthocyanins is 180-215 mg/day, used as antioxidant nutritional supplements. Products are available in tablet form, with each tablet containing 50 mg of anthocyanins, or 12 mg of anthocyanin and 1 mg of beta-carotene per tablet.
