Uses
Any of several water-soluble proteins that are coagulated by heat and are found in egg white, blood serum, and milk. Milk is termed lact and milk ate and it contains 28–35% protein and 38–52% lactose. It is used as a binder in imitation sausage, soups, and stews.

Although there is no proven or even probable instance of transmission of Creutzfeldt-Jakob Disease (CJD), also known as Trans- missible Spongiform Encephalopathy, by blood, blood components or plasma derivatives, increased awareness has raised concern about such a possibility. While published epidemiological studies give some reassurances that transmission of CJD has not occurred through blood, they are limited in scope, and improved surveillance for CJD is essential. In addition to routine internationally recognized donor selection criteria the following donors should be excluded: donors who have been treated with extracts from human pituitary glands, donors who have familial history of CJD, Gerstmann- Str?ussler-Scheinker syndrome (GSS) or Fatal Familial Insomnia (FFI), and donors who have received a human dura mater graft.
