Isomerase, glucose Usage And Synthesis
Chemical Properties
Near white to pale tan or brown or pink amorphous powder, granule or liquid. Soluble in water (granules are insoluble in water), insoluble in ethanol, chloroform and ether. The main enzyme of Isomerase, glucose is glucose (or xylose) isomerase. The optimum pH is 6 to 8. Manganese and potassium can improve heat resistance. The optimum temperature is 40 to 65°C (60°C).
Uses
Glucose isomerase can catalyze the isomerization of D-glucose to fructose and D-xylose to D-xylulose. It can be used to make high fructose syrup from glucose.
Preparation
The strains that produce this enzyme include actinomycetes such as Streptomyces chlorophyll, Streptomyces albicans (S. Allus) and Brevibacterium lactis. This enzyme is an intracellular enzyme. The cultured cells are autolyzed by hypertonicity, and transformed at 25°C for 30 hours; after separation, washing with water to remove the attachments of the culture medium, and spray-drying or freeze-drying to obtain the product
