Chemical Properties
The roots contain glycosides with a strong bitter flavor, the main component of which is gentiobioside (Gentiopicrin, C16 H20O9), which contains about 2% in the fresh roots, and most of which no longer exists after drying or fermentation, but forms a strong bitter taste of gentiobioside (Gentiamarin, which doesn't exist in the fresh roots). It also contains gentianic acid, sucrose, lipids, pectin and enzymes.
