Odor

Powerful and diffusive, sweet, buttery-creamy and fruity-winey odor. It appears less Apple-like than the odor of the cis-3-Hexenyliso-valerate and much more creamy at suitable dilution (approximately 5 ppm or lower).

(E)-2-Hexenyl valerate has a ripe apple, pear, fruity-wine odor

Uses

(E)-2-Hexenyl valerate gives power and richness to the conventional esters used in such flavors, and it lends the much desired creamy-buttery note to Rum flavor, although it is by no means a key ingredient.

Preparation

trans-2-Hexenyl valerate is produced by direct estcrification of trans-2- Hexenol with (iso-)Valeric acid, preferably under azeotropic conditions.
