Chemical Properties
Heptanal glyceryl acetal has a mild, mushroom-like, sweet odor and a mushroom (champigonon) taste.
Uses
Beyond some possible use in a few rare cases (Hyacinth, etc.), heptanal glyceryl acetal is hardly ever used in perfumery. It finds some use in flavor compositions for imitation Mushroom.
Synthesis
Heptanal glyceryl acetal is produced by condensation of Heptaldehyde with Glycerin.
Preparation
By condensing heptaldehyde with glycerin.
