Uses
3-Propylidenephthalide is used in Celery Essential Oil and preparation method thereof.
Preparation
By condensing phthalic anhydride and butyric anhydride at 175°C in the presence of sodium butyrate.
Taste threshold values
Taste characteristics at 25 ppm: green, celery, sweet and lovage with vegetative and herbal nuances.

Clear yellow liquid.

May be sensitive to prolonged exposure to air and moisture . Insoluble in water.
