Chemical Properties

A colorless liquid with a powerful, green, herbaceous odor. Fairly stable in alkali, unstable in acid of pH lower than 5.

Occurrence

Reported found in guava fruit (Psidium guajava L.) and plum

Preparation

From acetaldehyde diethyl acetal (acetal) with cis-3-hexenol

Aroma threshold values

Powerful green, hcrbaceous-vegetable, oily odor, reminiscent of many natural products. Used sparingly in floral perfumes to introduce a natural-green topnote, and in general as a topnote in mossy or citrusy perfumes.

Taste threshold values

Taste characteristics at 1 ppm: dry, green, rindy with a fruity finish, slightly buttery and mushroom-like with metallic nuances.
