Chemical Properties
Dark red powder, greasy, tasteless and odorless. Soluble in ethanol and propylene glycol, insoluble in water. Strong coloring ability, the hue by the pH value of the influence of small, heat resistance, metal ions, good, but light resistance is a little poor, sunlight will fade. Good stability in ethanol solution. Mice, almost non-toxic. The oral LD50 of mice is more than 10g/kg (powder products), and the LD50 of mice injected intraperitoneally is 7g/kg.
Uses
MONASCUS RED is extracted from red Aspergillus is a natural pigment species with good development prospects, and is also one of the main physiologically active substances produced by Aspergillus oryzae, which can be used as a natural preservative colorant with a wide range of applications, and has good prospects for application as an additive in the food field, especially in meat products.
