Cinnamyl propionate has a spicy, fruital odor with a woody, balsamic undernote and a sweet, warm, powerful, spicy taste.
Occurrence
Ha s apparently not been reported to occur in nature.
Preparation
By direct esterification of cinnamic alcohol with propionic acid under azeotropic conditions, or with propionic anhydride (Arctander, 1969).
Taste threshold values
Taste characteristics at 10 ppm: sweet, floral, waxy, balsamic, green, punch, grape and cherry.
