It is produced by solvent extraction of the dried unpeeled rhizome of Zingiber offcinale, ground to a moderately coarse powder and subsequent removal of the solvent Ginger oleoresin has a characteristic odor and pungent favor of ginger.

A dark-brown, viscous liquid, which usually deposits a grainy mass at the bottom of the con- tainer It is soluble in alcohol (with sediment).
