Benzyl butyrate Usage And Synthesis

Chemical Properties

Benzyl butyrate has a characteristic fruity-floral, plum-like odor and a sweet, pear-like taste.

Chemical Properties

CLEAR COLOURLESS LIQUID. B.P:240℃. Sp.Gr = 1.01. Insoluble in water, Propylene glycol and Glycerin, soluble in alcohol and oils. Heavy, fruity-floral odor, mainly fruit, like Plum.

Occurrence

Reported found in papaya, black tea, Passiflora edulis juice, cherimoya (Annona cheremolia Mill.), Bourbon vanilla, mountain papaya and hog plum (Spondias mombins L.).

Uses

Benzyl Butyrate is a pesticidal compound.

Uses

Plasticizer, odorants, flavoring.

Preparation

By heating benzyl chloride and sodium butyrate in water or butyric acid and benzyl chloride under pressure.

ChEBI: Phenylmethyl butanoate is a carboxylic ester. It is functionally related to a benzyl alcohol.

Application

Benzyl butyrate is used in perfume compositions as a modifier-companion to Benzyl acetate and or Benzyl propionate. Performs well in soap. Also as a modifier for floral-fruity notes in Acacia, Geranium, Muguet, Rose, Lily, etc. Must be used in concentrations far below those of Benzyl acetate. In flavor compositions the ester is used for imitation Apricot, Butler, Cheese, Liquor, Loganberry, Muscatel, Nut, Peach, Pear, Raspberry, Strawberry, Pineapple, etc. Also suggested for Mango imitation flavor. Concentrations are usually as low as 10 ppm, but may be up to 350 ppm in chewing gum.

Taste threshold values

Taste characteristics at 30 ppm: sweet, aromatic, powdery vanillin-like.
